    My Super Mom Picture

    My Super Mom Picture My 12-year-old son drew this picture of me this week.  At the top of the page it says, “Super Mom“... and as you can see at the bottom… apparently Super Mom cooks super fast!  :-) Just a note to self: Slow down!  No wonder I’m always making a mess in the kitchen! For you moms out there, I want to encourage you not to feel like you have to be super mom all the time.  Remember to delegate jobs.   I started teaching my boys how to fold their own laundry when they were only 4 years old.     Simple Spinach Dip

    Simple Spinach Dip 1 10 oz pkg frozen spinach (thaw, squeeze out excess liquid and chop) 1 cup low fat sour cream 1 cup mayo (I use Kraft mayo with olive oil) 1 can water chestnuts – diced 3 green onions, finely chopped 1 pkg. Knorr Vegetable Soup Mix (dry) Combine all ingredients and chill for an hour. Note: I simply used some Lawry’s Seasoned Salt (containing no MSG) to add seasoning instead of the Knorr Vegetable Soup Mix .  You may also experiment with other seasoning mixes if you like.  I’ve seen other recipes include these for seasoning:  1 pkg.     What do I weigh now that the holidays are over?

    What do I weigh now that the holidays are over? Well, I finally took the courage to step on the scale yesterday morning to see what damage had been done over Thanksgiving, Christmas, my Anniversary and Birthday celebrations.   To my big relief, I weighed 5 lbs less than the last time I had climbed on that scale which was before all the holidays. Did I avoid eating? Uh…I would like to say that I turned my head and snubbed all those tempting foods, but even a mouse has a hard time resisting stepping onto the mouse trap when there is savory food right before him.
